Whenever I cut up a white beetroot I am simply amazed by how vibrant their pinks are. Having to scrub my hands after that is thus totally worth it! And while I washed my hands, I had a delicious idea: Beetroot + red onions + maple syrup + bacon = a divine dinner treat! =)

And with no further due:

  • 3 small beetroots (I had a pink-white, a yellow and a pure pink one)
    • chop them and cut in about 2cm thick pieces
  • 2 tbsp of olive oil
  • salt and pepper
    • add and toss them on a baking tray and roast at 180°C for about 30min or until tender (but still kind of crisp… so just right)
  • carbohydrates of your choice – I cooked some millet
    • cook and keep warm on the side
  • 3 strips of bacon
    • fry and keep warm
  • 1 red onion
  • 1 tbsp of olive oil
    • fry and add the roasted beetroot
  • 2 tbsp maple syrup
    • add and glaze

Once all ingredients are prepared, assemble your beetroot dish and enjoy! I find that this dish is best enjoyed warm, not hot.
